As promised, here is the stuffed peppers recipe.
- 1 pound ground beef (I used ground turkey)
- 1 packet of rice - brown (the boil-in-a bag brown rice)
- 4 large green bell peppers
- 2 (8 ounce) cans tomato sauce
- 1/4 teaspoon garlic powder
- medium onion, diced
- salt and pepper to taste
1.) Preheat oven to 350.
2.) Cut the middle out of the green peppers. Use pepper tops to add mixture.
2.) Use 6 cups of water and bring to a boil. Add peppers. Let boil for 10 minutes. This allows green pepper to expand. Remove with tongs. Set aside, flip over and allow to dry. Once dry, put in a 8x8 pan so that the peppers fit perfectly.
3.) Start browning ground turkey. Add diced onion.
4.) In another pan, boil rice.
5.) Mix ground turkey and rice in a bowl. Add garlic powder, salt and pepper to taste.
6.) Add tomato sauce to bottom layer of green pepper. Using the ground turkey mixture, fill to the top. Add top layer of tomato sauce to each pepper.
7.) Add tomato sauce to the bottom of the 8X8 pan.
6.) Using cooking spray, spray aluminum foil to keep the pepper to sticking. Put cooking spray side of the aluminum on the side of the peppers.
7.) Cook for 25-35 minutes.
